Description
The grape version of pitteddhe, with a dark jammy centre visible inside each star.
Shortcrust of soft wheat flour, sugar, butter, eggs, re-milled durum semolina and honey, scented with lemon and vanillin. The dough is folded by hand into a star around a grape filling, left open in the middle. Baking sets the edges crisp while the filling stays soft.
For restaurants and chefs. The grape filling pairs well with red dessert wines and with a cheese course, especially fresh ricotta or pecorino. Offer them as part of a regional petit four selection. Their open centre adds colour to a plate.
For specialty and Italian stores. Grape pitteddhe are less common than the fig version and appeal to shoppers looking for something specific to Salento. Stocking both flavours lets customers compare. They are a good companion to Puglia wines in gift sets.
Specs: 225 g, case of 10, shelf life 4 months, Puglia (Italy).
