The interest has shifted towards whole grains “in toto”, as they are rich in a whole series of precious nutrients, rather than fiber alone: from phenolic compounds to phytic acid, from lignans to tocotrienols, compounds that in large part perform a beneficial antioxidant action. It is established that whole grains and their constituents are able to influence many functions, from absorption and intestinal modality to oxidation, from homeostasis to the activity of the immune system. Cereals, in fact, are those that have the highest concentrations of nutrients and other components of great interest, especially in the outermost layers, namely the bran and the germ.
Whole grains are made up of endosperm, germ, and bran.
