Description
Tarallini made with vincotto, the cooked grape must known in Salento as cuettu.
Soft wheat flour, sugar and olive oil are worked with white wine and sweet grape vincotto at 10%, then lifted with baking powder and scented with vanillin. The vincotto darkens the dough and adds the sweetness of cooked grape must. The producer declares gluten, and sulphites from the wine.
For restaurants and chefs. Vincotto is a pantry staple of Puglia kitchens, and these rings carry its flavour into the dessert course. Serve them with a drizzle of vincotto over ricotta or with a glass of Primitivo di Manduria dolce. They also pair well with blue cheeses on a cheese board.
For specialty and Italian stores. The word vincotto, and its Salento name cuettu, signal a genuine local recipe that is hard to find outside Puglia. That rarity supports a higher shelf price than standard biscuits. Suggest them with a bottle of vincotto or dessert wine as a gift pairing.
