This is Luisa Pantaleo's everyday passata, made from Apulian tomatoes picked ripe and processed within 48 hours. The tomatoes are sorted and washed in stainless steel tanks, then cooked and sieved into a thick, velvety purée, bottled and pasteurised for long keeping. The colour is a bright red and the taste sweet with a savoury edge, a sign of good raw material. The larger 700 g format is the one to choose when passata is used every day.
