Regional ItalianPrickly pear jam brings an unusual Mediterranean fruit to the cheese course. Serve it with spicy or semi-aged cheeses, spoon it next to white meat as a sweet condiment, or use it to fill rustic tarts and to top natural yoghurt for breakfast service. Because the seeds are removed, the texture is smooth and easy to pipe or spread on a plated dessert. A small spoonful is enough to give a cheese plate a talking point.
Specs 265 g, case of 6, shelf life 36 months, organic, Puglia (Italy)
Allergens none declared by the producer
Few jams can claim a fruit most shoppers have never tasted, and that curiosity is the selling argument. Staff can explain it in a sentence: the fruit of the prickly pear cactus, made into jam on an organic farm in Puglia, smooth and seed-free. It works as a gift with a local cheese, and the 265 g jar sits in a comfortable price range for a discovery purchase. With 36 months of shelf life from production, it can stay on the shelf while customers get to know it.

Prickly pears grow wild and in gardens across Southern Italy, and their fruit has a sweet, delicate flavour that few customers abroad have tasted. Here the freshly picked organic fruit is cut, blanched for a few minutes and sieved to remove the hard seeds, then the pulp is cooked slowly with cane sugar and lemon until soft and set. The jam is jarred and pasteurised. The declared ingredients are organic prickly pears, organic cane sugar and organic lemons. The taste is sweet and fragrant, with a light citrus note.

Luisa Pantaleo's organic farm extends over 150 hectares at Speziale di Fasano, Puglia, along the Dune Costiere Regional Park. Here the family grows, harvests and processes everything: tomato passata and sauces, organic olive oil from its own mill, preserves, jams and legumes.
