Savorita pickRegional ItalianA single-variety passata gives the kitchen a base with a recognisable taste and a consistent texture. Use it for quick pasta sauces and slow ragù, as the tomato layer on pizza and panzerotti, or in baked dishes such as parmigiana and stuffed vegetables. Its natural sapidity means the sauce needs little added salt. The 500 g jar suits sauce batches for a short service or a single large tray.

Case of 6 × 500.
Organic passata of Regina tomatoes, a single variety from Puglia.
Pomodoro Regina is the traditional tomato of the Apulian coast, and this passata uses it alone. The tomatoes are picked ripe and processed within 48 hours: they are sorted by hand, washed in stainless steel tanks, cooked and sieved into a dense, creamy purée, then jarred and pasteurised. The declared ingredients are organic Regina tomato from Puglia and salt. The fields are irrigated with brackish water, which the producer credits for the natural savoury note of the tomato. The colour is a bright red and the texture compact.
