The base is farmed mushroom (Agaricus bisporus) and extra virgin olive oil, carrying 5% summer truffle (Tuber aestivum Vitt.), with black olives, carrots, celery, parsley and a broth preparation for body. No cream and no starch thickener: the texture comes from the vegetables and the broth reduction.
For restaurants and chefs. Stir it into a white ragù or a tomato sauce to round out the truffle note, spoon it raw over a just-baked pizza, or fold it through scrambled eggs off the heat so the aroma survives. A rough guide from the producer: 40 to 50 g dresses two pasta or pizza portions, 80 to 100 g serves four, so a 900 g tub covers roughly 18 to 22 portions before reordering. At this size the cost per portion drops well below the 80 g and 250 g jars, which suits a kitchen running the sauce as a standing menu item rather than a seasonal special.
