Description
Tritolo, finely chopped Calabrian chili in oil.
Rosso di Calabria makes Tritolo with chili peppers grown in Calabria, selected one by one and then chopped. Chili accounts for 61% of the jar, preserved in sunflower oil and extra virgin olive oil with salt, oregano and garlic, and citric acid as acidity regulator. The producer, Pasqua Service, is based in Corigliano Rossano, in the province of Cosenza.
For restaurants and chefs. Chopped chili in oil brings Calabrian heat into a dish with full control over the dose. Stir a spoonful into the pan at the start of aglio, olio e peperoncino or an arrabbiata, brush it on grilled fish and octopus, or finish pizza and focaccia as they leave the oven. The oil spreads the heat evenly through a whole pan, and half a teaspoon per portion is an indicative starting point to adjust to taste.
For specialty and Italian stores. Calabrian chili condiments are a recognisable category for customers who cook Italian at home, and a jar at this price is an easy add-on to a basket of pasta and passata. Tritolo, Ruote di Fuoco and Cremì cover three textures of the same chili from one producer, which helps staff move a customer from the smooth cream to the coarser cuts. A 24-month shelf life keeps stock risk low.
