Description
Negroamaro rosé from Copertino, the style that made Salento a reference for Italian rosato.
Tenuta Paraida Rosato is a Copertino DOP from 100% Negroamaro, grown as alberello with vines about 30 years old. The grapes are softly crushed and left on the skins for 6 to 7 hours, just long enough for the colour, then fermented at 18-20°C and kept about three months in stainless steel. The producer describes a bright cherry colour, raspberry, cherry and peach blossom on the nose, and a dry, harmonious palate with a grassy background and a light bitter finish. Serve at 10-12°C, opened just before drinking.
For restaurants and chefs. Its dry, slightly bitter profile makes it a rosé for the table, and the producer suggests it with fish appetizers and a wide range of dishes. It suits raw seafood, fried paranza, tomato-based fish soups and summer vegetable plates. One bottle can follow the guest from aperitivo into the first courses.
For specialty and Italian stores. Salento Negroamaro rosé has a long reputation, and this one has the medals to back it: gold at the Mondial du Rosé for the 2016 vintage and best Negroamaro rosé at Rosati in Terra di Rosati 2023 for the 2022. That makes it an easy recommendation for spring and summer dinners and for gifts to rosé lovers. The red Tenuta Paraida Rosso completes the pair.
