Description
A macerated white: Verdeca left 20 days on its skins, then aged two years in concrete.
Hidria is a Salento IGP made from 100% Verdeca, a native white grape of Puglia, grown on Guyot around Copertino. Harvested in the second half of September, the grapes are destemmed, pressed and fermented in concrete tanks with 20 days of skin maceration. The wine then ages 24 months in concrete and six months in bottle, and is bottled unfiltered with natural decantation. The producer notes a golden colour with amber reflections, candied fruit, apricot, orange peel, cedar and Mediterranean scrub, and a soft palate with a light tannic touch and fresh acidity. Serve at 15-18°C.
For restaurants and chefs. Skin-contact whites answer the demand for orange wine on modern lists, and Hidria gives that style a Puglia origin. Served at 15-18°C, warmer than a usual white, it pairs with medium to long-aged cheeses, lean meat and fish such as salmon, as the producer suggests. It also stands up to roast pork, mushroom risotto and spiced dishes where a lighter white would fade.
For specialty and Italian stores. Few customers will have tasted macerated Verdeca, which makes Hidria a real discovery bottle. It speaks to wine enthusiasts and to shoppers curious about natural and orange wines. It rewards a short explanation from staff, and a wedge of aged cheese from the counter makes the suggestion concrete.
