Description
Verdeca aged four months on its fine lees, for a savoury white with extra texture.
Macine Grandi is a Salento IGP from 100% Verdeca grown on Guyot around Copertino. The grapes are softly crushed and pressed, the skins removed at once, and the juice fermented in steel below 15°C. The wine then rests on its fine lees for four months with regular bâtonnage. The producer describes straw yellow with greenish reflections, yellow-fleshed fruit and citrus on the nose, and a dry palate with marked savouriness and good persistence. Serve at 8-10°C.
For restaurants and chefs. Lees ageing gives it more weight than a simple steel white, well suited to the seafood and fish dishes the producer recommends. It pairs with crudo, grilled octopus, seafood linguine and baked fish with potatoes. Its savoury edge also meets salty starters such as anchovies or bottarga.
For specialty and Italian stores. Verdeca is a native Puglia grape that many customers have yet to meet, so it gives the white range a point of difference. Lees ageing is a clear step up from an entry white and supports a slightly higher price. It suits shoppers planning a fish dinner and sells well with seafood preserves.
