Description
Capuccini is a Salento IGP Primitivo from alberello vines with an average age of over 50 years.
The grapes are grown around Copertino. After pressing, the must macerates on the skins for 10 days with fermentation kept at 24-26°C, and the wine ages in stainless steel tanks. The producer describes a deep ruby red with violet reflections, cherry, plum and spice on the nose, a full body and a soft, dry palate. At 15.5% vol on the current vintage it is the strongest wine of the range. Serve at 18°C.
For restaurants and chefs. Primitivo is the Puglia grape most guests already know, so Capuccini sells easily from the list. Its body handles important roasts, slow-cooked ragù and orecchiette with meat sauce, and the producer also recommends it with aged cheeses. Steel ageing keeps it fruit-led, a safe pick by the glass for guests who want a big red with no oak.
For specialty and Italian stores. Primitivo di Puglia is among the Italian reds best known abroad, which supports steady sales. Old vines and a WineHunter Award for the 2021 vintage give staff a short story at the counter. In price it sits between everyday reds and special bottles, a comfortable step up for regular customers. It pairs with the aged cheeses and cured meats a store already carries.
