Description
Organic sun-dried tomatoes, dried on racks in the Apulian sun.
Penny tomatoes are picked ripe and processed within 48 hours. They are washed, cut and laid on racks in the sun, covered with fine netting to protect them while they dry, following the Apulian tradition. Once dried, they are boiled briefly in water and vinegar, dried again and jarred with organic extra virgin olive oil and organic oregano, then pasteurised. The declared ingredients are organic tomato, organic extra virgin olive oil, organic oregano and salt. The flavour is concentrated and sweet, with a savoury edge and the scent of oregano.
For restaurants and chefs. Sun-dried tomatoes concentrate the taste of summer tomatoes into a ready ingredient. Chop them into pasta with breadcrumbs and capers, layer them in sandwiches, puccia and focaccia, or add them to baked dishes and rustic tarts. On an antipasto board they pair with fresh cheeses and cured meats. The oil from the jar is already flavoured with tomato and oregano and works as a dressing for the same dish.
For specialty and Italian stores. Sun-dried tomatoes in oil are a known Italian product, and this jar adds a story staff can tell in a sentence: Penny tomatoes dried on racks under the sun of Puglia, on one organic farm. The deep red colour sells through the glass, and the jar fits gift baskets with pasta and olive oil. It is a destination purchase for customers who cook Italian at home, and it keeps for 36 months from production.
