Foglie d'ulivo is an Apulian pasta shape named after the leaves of the olive tree. Il Mulino Calogiuri makes it with Senatore Cappelli durum wheat semolina, water and 3.10% dehydrated spinach flour, which gives half of the leaves their green colour. Senatore Cappelli is a durum wheat selected by Nazareno Strampelli in 1915 and named after Senator Raffaele Cappelli; the producer mills it from grain grown in the countryside around Lecce, keeping the germ in the flour.

Il Mulino Calogiuri was founded in 1960 by Giuseppe Calogiuri in Lizzanello, near Lecce, and is now run by the third generation. The family mills organic flours and makes pasta and friselle from traditional and healthy grains such as Senatore Cappelli and tritordeum.
