Durum Wheat Flour Cappelli from “Il Mulino Calogiuri”
Flour is obtained from the milling of selected and certified Senatore Capelli Durum Wheat, coming exclusively from the hinterland of Lecce, in the heart of Salento. Senatore Cappelli is a variety of durum wheat selected by Nazareno Strampelli in 1915. It owes its name to Senator Raffaele Cappelli, author of the first agrarian reform and diffuser of the precious variety. For many years cultivated throughout southern Italy, it subsequently fell into oblivion due to low productivity and to make room for more profitable crops. However, this cultivar has excellent organoleptic characteristics: it contains a rather high percentage of proteins and easily resists climatic adversities. Today, thanks to the sensitivity towards products that have not undergone genetic mutations, interest in this variety have been reborn.
We produce the flour from the Senatore Cappelli wheat by hand, taking particular care not to de-germinate the grain, since the germ is rich in “vitamin E” and unsaturated fats, many of which have antioxidant activity. To better protect the organoleptic and nutritional properties, it is recommended to keep them in the fridge.
