Grano arso, the toasted wheat flour of Puglia.
Grano arso is a traditional Apulian flour made from toasted durum wheat grains. Toasting gives it a dark brown colour and a flavour the producer describes as toasted and lightly smoky, close to freshly baked bread. In the past it was milled from the grain left in the fields after the stubble was burned; today the grain is toasted on purpose.
