Description
Ancient grains and beta barley in one pasta.
The producer stone-mills together farro dicocco, Riminia Salentino and Senatore Cappelli grains, then adds a barley flour enriched to 11% beta-glucans. Shaped into caserecce and dried, the pasta carries 11.6 g of fibre and 12.2 g of protein per 100 g. The producer labels it a low glycaemic index pasta.
For restaurants and chefs. A wholesome option for menus that highlight fibre-rich dishes: 11.6 g of fibre per 100 g. Pair it with lentil or chickpea sauces, with mushrooms and thyme, or with a simple tomato and basil. The ancient grain blend gives a darker, rustic pasta that reads well on a seasonal menu.
For specialty and Italian stores. Ancient grains and beta-glucan barley give two reasons to buy in one pack. The producer labels it a low glycaemic index pasta, a point label-reading customers look for. It fits next to whole-grain pasta and legumes, and sells at a price close to standard artisan pasta.
