Description
Paccheri: large, soft, theatrical tubes for rich and baked dishes.
The producer calls them “grandi, morbidi e scenografici”, suited to rich and oven-baked dishes. The recipe is organic durum wheat semolina and water. Native wheat varieties come from certified farms in Puglia and Basilicata; the producer, based in Altamura, bronze-draws the pasta and dries it slowly at low temperature. The semolina is laboratory-tested before processing, and the finished pasta has no mycotoxins above detection level (below 20 ppb). Cooking time 11 minutes. Store in a cool, dry place.
For restaurants and chefs. Paccheri are a Neapolitan classic for seafood and generous sauces: scorpion fish or swordfish with cherry tomatoes, a Genovese onion ragù, or stuffed with ricotta and baked. Their size gives the plate presence, which helps a signature pasta stand out on the menu. Cook 11 minutes, then finish in the sauce so the tubes fill evenly.
For specialty and Italian stores. Paccheri are a favourite for special dinners and weekend cooking, an occasion that supports a premium price and a good margin. The organic and mycotoxin-free claims strengthen the case for this pack over mass-market versions. Suggest it with a seafood sauce or fresh ricotta as a complete meal idea.
