Description
Bronze-drawn maccheroni rigati in a 300 g pack, from organic wheat of Puglia and Basilicata.
Only two ingredients: organic durum wheat semolina and water. Pasta Orobio, based in Altamura, sources native wheat varieties from certified farms in Puglia and Basilicata, then dries the pasta slowly at low temperature. Laboratory checks on the semolina come before processing, and analysis finds no detectable mycotoxins in the pasta (below 20 ppb). Cooking time 10 minutes. Store in a cool, dry place.
For restaurants and chefs. The 300 g pack gives roughly three portions at a standard 100 g serving, a practical size for wine bars, small kitchens and for testing a new dish before ordering the larger pack. Classic pairings are a pork or beef ragù, sausage with cime di rapa in the Apulian style, and tomato finished with ricotta salata. Cook for 10 minutes and toss in the pan with a ladle of cooking water so the ridges take up the sauce.
For specialty and Italian stores. The smaller pack keeps the shelf price low, which makes it an easy first purchase for shoppers new to organic, mycotoxin-free pasta. It also works as an add-on at the till and inside gift boxes of southern Italian food, for example with an olive oil the store already carries.
Format guidance: the 300 g pack suits specialty retail and small kitchens. The 500 g pack gives restaurants and regular buyers a better cost per portion.
