A spread of green olives (85%) with extra virgin olive oil, salt and lactic acid as acidity regulator, made with no preservatives or thickeners and with 100% Sicilian ingredients. It comes from Azienda Agricola Mirto, a farm founded in 2022 in Mazara del Vallo, in the province of Trapani, whose patè range is certified organic.
For restaurants and chefs. Made for service: it comes ready from the jar, so a spoonful goes straight onto toasted bread for aperitivo crostini or a bread basket starter. Loosened with a little pasta water and extra virgin olive oil, it dresses short pasta or spaghetti off the heat in seconds. Whisked into oil and lemon it becomes a quick dressing for grilled vegetables, potatoes or white fish, and it spreads well in panini for a lunch menu.
