Description
Pitteddhe: small shortcrust pastries from Salento, folded into a star around a fig filling.
The pastry is made with soft wheat flour, sugar, butter, eggs, re-milled durum semolina and honey, with lemon and vanillin. Each disc is pinched by hand into a star shape and filled with fig before baking. The semolina gives the crust a slight crunch.
For restaurants and chefs. Pitteddhe are a traditional sweet of the Salento table, and the fig filling pairs naturally with aged cheeses and a glass of sweet wine. Serve one or two as a petit four or with coffee. They also work on a breakfast buffet.
For specialty and Italian stores. The hand-folded star shape is distinctive and photographs well in a clear bag. Figs are a recognisable flavour for most customers, which makes this the easiest of the pitteddhe to try first. It fits a regional gift basket with figs, almonds and wine.
