Here the freshly picked organic fruit is cut, blanched for a few minutes and sieved to remove the hard seeds, then the pulp is cooked slowly with cane sugar and lemon until soft and set. The jam is jarred and pasteurised. The declared ingredients are organic prickly pears, organic cane sugar and organic lemons. The taste is sweet and fragrant, with a light citrus note.
