GRAPES.
Negroamaro 80%, Malvasia nera di Lecce 15%, Montepulciano 5%, with an average age of the vineyard of about 40 years old.
TRAINING SYSTEM.
Apulian “Alberello”
VINIFICATION.
Classic vinification in red, the must remains in maceration with the skins for about 6-8 days in order to obtain a wine of great body colour and fragrance. The fermentation temperature is maintained between 26-28 ° C.
AGEING.
In tonneau per circa 6 mesi.
TASTING NOTES.
The colour is deep ruby red, the nose has a complex bouquet with hints of vanilla, carob, berries and spices. The taste is dry with a slightly bitter aftertaste, velvety, sapid, generous.
FOOD PAIRING.
It is a wine that goes perfectly with first courses, roasts and grilled, stewed meat and aged cheeses
