From ancient cereals ( Farro dicocco , Riminia Salentino , Senatore cappelli , Maiorca) cultivated in Puglia milled and processed in the heart of Salento.
It is an artisanal flour from “Il Mulino Calogiuri” obtained from the mixture of grains then ground with a stone mill.
