It is used mixed with other flours with a percentage of 10 – 30%. Mulino Calogiuri
‘s chickpea flour is without preservatives and additives.
It gives an intensely rustic and aromatic flavor to all doughs: unleavened, for fresh or dry pasta or wraps, but it also lends itself very well to give a tasty touch to leavened products such as baked goods for example bread, pizzas and desserts.
The chickpea flour is obtained from the milling of the dry legume.
