Description
Olive leaf pasta in two colours, with spinach.
Foglie d’ulivo is an Apulian pasta shape named after the leaves of the olive tree. Il Mulino Calogiuri makes it with Senatore Cappelli durum wheat semolina, water and 3.10% dehydrated spinach flour, which gives half of the leaves their green colour. Senatore Cappelli is a durum wheat selected by Nazareno Strampelli in 1915 and named after Senator Raffaele Cappelli; the producer mills it from grain grown in the countryside around Lecce, keeping the germ in the flour.
For restaurants and chefs. The two-tone leaves make a plate look finished with little effort. Dress them with cherry tomatoes and cacioricotta, with a light seafood sauce, or with turnip tops in the Apulian way. The flat leaf shape cooks evenly and holds a thin, oily sauce well.
For specialty and Italian stores. The olive leaf shape is instantly linked to Puglia and catches the eye on the shelf. Natural colour from spinach, with no added colourings in the list, is an easy point at the counter. It sells as a gift item next to the producer’s olive oil.
