THE VARIETY – The Torre Guaceto Fiaschetto tomato puree from the Calemone company has a bright red colour, is juicy, with a sweet flavour; of medium consistency.

THE TERRITORY – The cultivation of the Fiaschetto di Torre Guaceto tomato of the Calemone company takes place exclusively with the organic method, at almost 50 meters above sea level, in the Torre Guaceto Reserve, which is located in the municipality of Carovigno, in the province of Brindisi. The climate is Mediterranean, therefore very temperate; the soils are of alluvial origin and have good drainage and fertility.

THE CULTIVATION– The seedlings, coming from the seeds that are selected by the Calemone company, are grown with the organic method, remaining for 40 days in the nursery. Subsequently they are buried during the month of March. Irrigation is not foreseen, only emergency irrigation is permitted. The fertilization of the soil, the phytosanitary treatments and the removal of weeds are carried out exclusively with methods foreseen by the regulation on organic farming.

THE HARVEST – The harvest takes place manually, in the summer, starting from the month of June.

PROCESSING – The tomato, as soon as it is harvested, is first blanched within a few hours, then placed in the pulper, bottled and finally pasteurized without the addition of preservatives.

PAIRINGS – The Torre Guaceto Fiaschetto tomato puree from the Calemone company can be used in all those dishes where the use of tomato puree is required, from first courses to zucchini parmesan rather than in lasagna.

STORAGE – Store in a cool, dry place. After opening, keep refrigerated.
