The mix is designed to have a good leavening thanks to one of our strong flours type 2 flour , a rustic flavor given by the semi-wholemeal flours of Cappelli and Tritordeum .
Special flour for pizzas “Il Mulino Calogiuri” has excellent nutritional characteristics, in fact it contains a rather high percentage of dietary and soluble fiber, an important element for our diet.
In addition, the flours that we produce by hand from Senatore Cappelli and Tritordeum durum wheat; they are produced taking particular care not to de-germinate the grain, since the germ is rich in “vitamin E” and unsaturated fats, many of which have antioxidant activity. To better protect the organoleptic and nutritional properties, it is recommended to keep in the fridge.
