THE VARIETY – The Fiaschetto tomato from Torre Guaceto “Semisecco” from the Calemone company has the bright red color of a ripe tomato, with a very sweet and very aromatic aroma and flavour, and a medium consistency. The dried tomato remains soft, due to the presence of juice inside.

THE TERRITORY – The company and the cultivated land are located within the Torre Guaceto Reserve, in the municipality of Carovigno, in the province of Brindisi, about 50 meters above sea level. The typically Mediterranean climate is mild all year round; the soils are of alluvial origin, with good drainage and fertility.

THE CULTIVATION– The seedlings, coming from seeds selected by the producer, are grown organically, and after 40 days in the nursery, they are buried in March. There is no irrigation, except emergency irrigation. The fertilization of the soil, the phytosanitary treatments and the removal of weeds are carried out with methods foreseen by the regulation on organic farming.

THE HARVEST – The harvest takes place manually, only throughout the summer period, which starts from the month of June.

THE PROCESSING– The cherry tomato cut into two pieces is placed in the oven to dry at average temperatures between 10 and 14 hours and placed in a jar with the addition of “L’Oro del Parco” Extra Virgin Olive Oil from monumental olive groves of the Riserva di Torre Guaceto without the addition of any type of preservative. This drying method causes the tomato to dehydrate, losing only the part of the excess water and concentrating the juices and sugars inside of the tomato.

PAIRINGS – The Fiaschetto tomato from Torre Guaceto “Semisecco” from the Calemone company is excellent for seasoning pasta, but also to accompany delicious appetizers such as imaginative canapés and classic bruschetta.

THE CONSERVATION– Store in a cool, dry place. After opening, keep refrigerated and consume within a few days.
