Description
Eliconi from Senatore Cappelli semolina.
These large spirals are made with Senatore Cappelli durum wheat semolina and water. Senatore Cappelli is a durum wheat selected by Nazareno Strampelli in 1915 and named after Senator Raffaele Cappelli; the producer mills it from grain grown in the countryside around Lecce, keeping the germ in the flour.
For restaurants and chefs. The deep spirals of eliconi carry baked and creamy sauces: the producer suggests them with tomato, smoked scamorza and sausage. They also suit a pasta al forno or a pesto with ricotta. Senatore Cappelli semolina gives a firm cooking result that holds in buffet service.
For specialty and Italian stores. Senatore Cappelli is one of the best known heritage durum wheats, and the name on the pack does much of the selling. The label is short, semolina and water, and the 500 g bag sits at an everyday price. It suits customers who already buy artisan pasta and want a regional origin.
