Gaia – Olio Novello 2022 is an extra virgin olive oil born from our desire to enhance the raw Nocellara olive. Its taste is a surprise in the Sicilian hinterland, being very fragrant, intensely olive and herbaceous. Tasting it, one has the sensation of walking on a field of grass on a summer afternoon

This extra virgin olive oil is made from Nocellara del Belice, Nocellara dell’Etna and Carolea olives. It is an oil that has a set of typically Sicilian flavors and with a marked predominance of raw olives. First of all, there is an intense medium olive fruitiness, accompanied by a bouquet of very varied scents such as cut grass, raw olives, tomato and almond. The taste is very harmonious and sees the presence mainly of sweet and spicy, while the bitterness is very light.

The color is green, while the overall acidity is very low. On the other hand, the content of polyphenols above 700 and vitamin E is rich.

The olives for this oil are harvested in the first days of October in a continuous cycle mill, then left to decant.

Gaia – Olio Novello 2022 is fragrant and intense in its sweet scent. It is an oil rich in scents of grass and flowers.
