Chili pepper in the shape of a dog’s nose , typical of the  city of Carovigno , it is  consumed in two ways : harvested small when it reaches the size of the tip of a little finger, it is fried in EVO oil and Fiaschetto tomato from Torre Guaceto, in this way it has a delicate and sweet because it has not yet developed the spicy part. It has always been widely used in the “Città della N’Zegna”, so much so that it is defined as the caviar of the Carovignesi not for its flavor but for the prices that the first harvests reach in June, even for its really small size.

If, on the other hand, it is left to grow until it is fully ripe, it takes on a bright red color and becomes spicy.

The de-husked hot peppers are coarsely chopped, flavored with wine vinegar and salt, placed in a glass jar with extra virgin olive oil and pasteurised. 
An ancient recipe for conserving chili peppers for periods when they weren’t being produced, a real treat to enrich all those dishes where spiciness is required.
