Burnt Wheat Flour from Il Mulino Calogiuri
It is used mixed with other flours with a percentage of 5 – 10%.
Mulino Calogiuri’s Arso Wheat Flour flour is without preservatives and additives.
It gives an intensely rustic and aromatic flavor to all unleavened doughs, for fresh, dry pasta or wraps, but is also very well suited to give a tasty touch to leavened products such as baked goods for example bread, sweet and savory pizzas.
Historically, burnt wheat arose from the need to recover the ears of wheat that fell to the ground following harvesting from the air. The undergrowth and the straw left on the ground were burned thus recovering the burnt wheat.
Today Arso wheat flour is obtained from the roasting of durum wheat followed by milling
It may contain traces of gluten, soy, sesame, and nuts.
